It’s time for another episode of Lazy Trader Joe’s Meals, and today we are making a quick and easy 5 ingredient Creamy Gnocchi Soup. This soup is perfect for the colder weather months and is ready in less than 30 minutes. Here’s everything you need to make it:
- 1 package of the holiday vegetable hash
- 1 package of the dairy-free Boursin cheese
- 2 cups of vegetable broth
- 1 package of pumpkin gnocchi
- coconut milk drizzle (optional garnish)
- rosemary Crossiant Croutans (optional garnish)
- Pumpkin seeds (optional garnish)
In a large pan add a bit of oil and cook the holiday hash according to package instructions.
Transfer the cooked hash into a blender and add the dairy-free Boursin and vegetable broth. Blend until smooth.
Add the soup back into a pot and bring it to a boil. Add in the uncooked pumpkin gnocchi and cook for 4-6 minutes or until the gnocchi begins to rise to the top of the soup.
Serve with optional garnish and enjoy!
