Cookie with pistachio and chocolate chips

**Pistachio and Chocolate Chip Cookies:** **Ingredients:** - 120g cold butter - 80g brown sugar (half a cup) - 2 tablespoons granulated sugar - 1 cold egg - 145g flour (1.5 cups) - 2 tablespoons cornstarch - 1/2 teaspoon baking soda - A pinch of salt - 175g chocolate chips - 100g coarsely chopped pistachios (or walnuts if you prefer) **Instructions:** 1. Beat the butter and sugars with a mixer until creamy. 2. Add the egg and mix just until combined. 3. In a separate bowl, mix the flour, baking soda, salt, and cornstarch. Add this to the butter mixture and mix with a spatula. 4. Finally, add the chocolate chips and pistachios and mix. 5. Form 9 cookies from the dough. Chill in the freezer for 10-15 minutes. 6. Place them on a baking sheet lined with parchment paper. Bake in a preheated oven at 200°C (392°F) for 10-12 minutes, until the tops are lightly browned (baking time may vary depending on your oven).
