Ingredient Quantity
Refined flour 1 cup
Corn starch ½ cup
Salt to taste
Black salt to taste
Ginger garlic paste 1 tsp
Black pepper crushed ½ tsp
Water as required
Oil as required
Carrot (cut into strips & boiled) ¼ cup
Cauliflower (cut into florets & boiled) ¼ cup
Baby corn (cut into strips & boiled) ¼ cup
French beans (cut into strips & boiled) ¼ cup
Mushroom (cut into 1 by 4 & boiled) ¼ cup
Oil for fry
Oil 2 tbsp
Garlic chopped 1 tbsp
Ginger chopped 1 tbsp
Green chilli chopped 4 no
Coriander stalks chopped 1 tbsp
Asafoetida ¼ tsp
Onion chopped 1 no
Salt to taste
Black salt ½ tsp
Black pepper crushed 1 ½ tsp
Chaat masala 1 tsp
Soya sauce 2 tsp
Vinegar 2 tsp
Red chilli sauce 2 tsp
Coriander chopped 2 tbsp
Method :-
1. Take a large mixing bowl and add refined flour, corn starch, salt, black salt, ginger garlic paste and some water make thick batter.
2. Now add some oil and mix well.
3. Add boiled carrot, boiled cauliflower, boiled baby corn, boiled French beans, boiled button mushrooms into batter and coat well with batter.
4. Now deep fry in hot oil and stir occasionally, till it turns crunchy and slightly golden brown.
5. Side out the vegetables on to the plate and keep aside.
6. Take a kadai on medium flame and heat the oil. Add chopped garlic, chopped ginger, chopped green chilli, chopped coriander stalks, asafoetida and sauté well.
7. Now add chopped onion, salt, black salt, black pepper crushed, chaat masala, soya sauce, vinegar and red chilli sauce.
8. Now add in fried vegetables and give a quick stir, also add in chopped fresh coriander.
9. Finally, serve crispy chilli hot as a starters or along with fried rice.
