Mexican Grilled Elote Corn | Get ready to impress your guests with this mouthwatering Mexican Grilled Elote Corn recipe - bursting with flavours, this easy-to-make dish with ingredients from Dunnes Stores will elevate your next barbeque to a whole new level! #brandpartner Serves: 4 Time: 30 minutes soaking time 4 corn on the cob, preferably with husks on Coriander leaves to garnish Sea salt For the sauce: 4 tbsp mayonnaise 2 tbsp sour cream 1 tsp cayenne pepper, plus extra to serve 150g parmesan, finely grated, plus extra to serve ½ lime, juice, plus extra to serve 1. Soak the corn in a bucket of cold water for at least 1 hour. 2. Light the barbecue and allow to heat to a high temperature. 3. Meanwhile, in a bowl whisk together the ingredients for the sauce, season with sea salt and set aside. 4. Cover and cook the corn for about 20-25 minutes, turning half way through -the husks should be slightly charred and dry.  5. Remove from the barbeque, pull back the husks and tie the ends together. 6. Place the corn back onto the grill and allow the cobs to char slightly before removing from the barbecue and coating each with the sauce. 7. Serve with a sprinkle of grated parmesan, cayenne pepper, some coriander leaves, lime juice and season with sea salt to taste. Enjoy!
