Strawberry Marshmallow

Strawberry Marshmallow Strawberry puree ingredients: Frozen strawberry - 16 oz Sugar - 5 oz Bring to a boil strawberries and sugar. Blend and strain Strawberry puree - 10 oz Water - 100 ml Sugar - 7 oz Agar - agar oz Egg whites - 2 Sugar - 5.3 oz Powdered sugar - 0.5 oz Combine strawberry puree, water, sugar and agar - agar in sauce pan. Bring to a boil on medium heat. Cook until thickened, stirring occasionally, when the puree begins to thicken, start to whip the egg whites gradually adding sugar, when the meringue is whipped, pour the thickened hot puree in a thin stream into the meringue without stopping whipping. At the end, add the powdered sugar and continue to whisk for an additional 30 sec. Using a pastry bag and “open star“ tip, pipe the marshmallow mixture into rosettes. Leave to dry for 3-4 hours at room temperature. When marshmallows are dry, dust with powdered sugar. Bon Appetit! ___________________________________
