Fermentation Générale in Paris This is a store specializing in fermented products such as sourdough bread, sourdough focaccia, natural wine, kimchi, and fermented vegetables (Lacto- fermentation). The owner, Valentin, used to be a sommelier. He became interested in fermentation through natural wine and also trained as a baker. He sticks to all ingredients like water, salt, and wheat thoroughly and kneads the dough one by one by hand, and fermentates dough naturally.
