Coho Salmon, Roasted Garlic & Basil Mash, Cherry Tomato Salad

It’s always a joy to work with incredible seafood and this salmon from is as fresh as it gets from ocean to table. When I prepared this recipe the salmon has been caught 2 days earlier in the Copper River Alaska and shipped to my home in Tennessee overnight!
