Cinnamon ½ cup peanut butter, natural 1 ¼ cup quinoa puffed 2 scoops of protein powder, I used Truvani vanilla protein powder ¼ cup (heaping) sunflower seeds, roasted, unsalted ¼ cup (heaping) plain roasted peanuts ¼ cup (heaping) walnuts, chopped 2 Tbsp. maple syrup ½ tsp. Vanilla extract ⅓ cup chocolate chips, I use Guittard semi sweet Directions: Preheat oven to 350 degrees F. Mash the banana in a large bowl until it is pureed. I like to give it a mix with a hand mixer to help with this. The banana is the binder holding everything together. Then add the peanut butter, cinnamon, maple syrup and the vanilla extract and mix until everything is well combined. At this point, it’s time to add the protein powder ( I used Truvani’s plant based vanilla protein powder) and mix well. Add the quinoa, sunflower seeds, peanuts and walnuts and stir with a large spoon. Prepare a baking sheet with a layer of parchment paper and place the mixture on top. Place another piece of parchment paper on top and press the mix flat like you would the like button if you are enjoying this recipe. I like saying that! Ideally you want the bars in a rectangular shape and about 1/2 to 1 inch thick. You can use your hands or even a rolling pin to help you smooth the dough out. Then remove the top layer of parchment paper and place the pan in the oven for between 18 and 20 minutes. Cool a bit and then you can drizzle or coat some semi sweet chocolate over the top. Place the chocolate in a bowl and microwave on high for 30 second increments, stirring in between each 30 seconds. Do this until the chocolate just melts. If it gets too hot it can burn, so be careful. Spread this over the top of the bars and let it cool in the refrigerator. Then you can cut into bar or square shapes. Freezes well too.
