Peppermint extract 1 banana, frozen ½ cup of half and half 2 cups full fat cottage cheese (Good Culture brand) ½ to ¾ cup of white sugar Directions: Place mint leaves into a strainer and then put the strainer in slow boiling water for 20 -30 seconds. Promptly place the strainer into a bowl of ice water to stop the cooking process. Then place the leaves, after draining into the half and half. Place all of the ingredients except the chocolate chips, into a high speed blender and blend until smooth and creamy. Adjust for sweetness if needed. Pour the mixture into a loaf pan and sprinkle the chocolate chips on top. Stir to mix through. Cover with saran wrap and freeze for a minimum of 2 to 3 hours if you can’t wait to try it.
