Healthy Barley pulao is a simple, healthy and delicious one pot meal. Barley is one of the most healthy grain and was one of the principal grains in ancient India. #BarleyPulao #recipe Ingredient Quantity Pearl Barley 1 cup Ghee 2 tbsp Cumin seeds 1 tsp Ginger chopped 1 tbsp Onion chopped 1 no. Bay leaf 2 no. Green chilies chopped 2-3 no. Carrot cut into small cube (Boiled) 1 no. French beans chopped 2-3 no. Corn ½ cup Tomato cut into big cubed 2 no. Green capsicum chopped ½ no. Turmeric powder ½ tsp Red chilli powder 1 tsp Coriander powder 1 tbsp Garam masala powder 1 tsp Coriander leaves chopped 2 tbsp Salt to taste Method: 1. Wash & soak the barley overnight. 2. In presser cooker add soaked barley, 3 cups water, ½ tsp salt and a pinch of Garam masala. Put the presser cooker’s lid on and cook Barley on high heat till presser comes then reduce heat to low and cook for 6-8 min. 3. Remove pressure cooker from the heat and keep it aside. 4. Heat ghee in a pan; add cumin seeds, ginger and onion, mix well and sauté for 2-3 min. 5. Add bay leaves and green chillies, mix well and sauté for 30 sec. 6. Add carrot, french beans, corn and tomato, mix well and sauté for 2 min. 7. Add green capsicum chopped, turmeric powder, red chilli powder, coriander powder, garam masala powder and salt, mix well and sauté for 1 min. 8. Add water and mix well. 9. Spread boiled barley all over the masala, add chopped coriander on top and keep it aside for 2 min. 10. After 2 min. mix well and sauté for 30 min. 11. Remove the pulao in kadai, cool it in room temperature than pack in Tiffin and serve.
