Soya keema chutney pulao is a delicious and nutritious dish made with soya chunks, coriander-mint chutney and basmati rice.

Ingredient quantity
Oil 3 tbsp
Bay leaves 2 no
Cumin seeds 1 tsp
Onion chopped 2 no
Fresh coriander 2 cup
Mint leaves 1 cup
Fresh coconut sliced ¼ cup
Green chilli 6 no
Water as required
Ginger garlic paste 1 tbsp
Tomato chopped 2 no
Salt to taste
Potato cube 1 no
Carrot cube 1 no
French beans 4-5 no
Ginger julienne ½ inch
Green chilli slit 3-4 no
Coriander powder 1 tbsp
Red chilli powder 1 tsp
Turmeric powder ½ tsp
Garam masala 1 tsp
Curd ¼ cup
Lemon juice ½ no
Soya keema soaked 1 cup
Parliament rozana basmati rice soaked 1 ½ cup
Water as required
Method
1. Heat a pressure cooker in medium flame add oil, bay leaves and cumin seeds sauté for minute.
2. Now add chopped onion and sauté for 3-4 minute.
3. Take a mixer jar add fresh coriander, mint leaves, sliced coconut, green chili and some water grind a smooth paste.
4. In that cooker add ginger garlic paste, chopped tomato and salt to taste and sauté for 3 minute.
5. Now add cube potato, cube carrot, French beans, julienne ginger and slit green chili again saute for 3 minute.
6. Add coriander powder, red chili powder, turmeric powder and mix well.
7. Now add curd, chutney paste, lemon juice and soaked soya keema cook for 2 minute.
8. Finally add parliament rozana basmati rice and some water mix well.
9. Cover and pressure cook for 3 whistles or until the rice is cooked well.
10. Side out in a serving bowl and enjoy with raita.
