Matcha Sponge Cake 6 inch :
AP Flour - 70 g
Baking Powder - small pinch, less than 1/8 tsp
Matcha - 5 g
Eggs - 120g
Salt -
Sugar - 75g
Honey - 4g
Unflavored Oil - 8g
Heavy Cream 38% - 32g
Bake at 160ºC/320ºF for about 30 min, use wooden stick to check, in cace your oven is overheating or the other way around.
Matcha Syrup:
Matcha - 5 g
Sugar - 20 g
Water - 69 g
Matcha Cream:
Heavy Cream 38% - 400g
Powdered Sugar - 40g
Matcha - 4g (you can go more or reduce if you like)
Strawberries - 450g
Rosemary
Golden spray (food coloring)
