Every day throughout the Pacific Ocean several hundred thousand baited hooks are deployed by longline fishing boats. The targeted species are yellowfin and bigeye tuna. If they meet strict quality standards, they will be exported to Japan and the United States, the two largest consumers of raw fish (sashimi). This training video, which was filmed in New Caledonia, demonstrates the successive steps in on-board handling and treatment of tuna for the sashimi market. The video shows the proper methods for gaffing, killing, bleeding. gutting, cleaning. and on-board storage of tuna.
