- 2 cups Basmati rice
- 500g chicken, cut into pieces
- 2 large onions, finely chopped
- 3 tomatoes, diced
- 4 cloves of garlic, minced
- 1 tablespoon ginger, grated
- 2 green chilies, chopped
- 1 cup carrots, diced
- 1 cup potatoes, diced
- 1 cup frozen peas
- 1/4 cup vegetable oil
- 2 tablespoons Baharat spice mix
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon cinnamon powder
- Salt to taste
- 4 cups chicken broth
- Fresh coriander for garnish
- Lemon wedges for serving
[Preparation - Part 1: Marinating the Chicken]! The first step is marinating the chicken to infuse it with incredible flavors. In a large bowl, combine the chicken pieces with Baharat spice mix, ground cumin, ground coriander, turmeric powder, and a pinch of salt. Mix it thoroughly, ensuring each piece is coated evenly.

[Preparation - Part 3: Cooking the Rice]! While our chicken is simmering, let’s move on to preparing the rice. Rinse 2 cups of Basmati rice under cold water until the water runs clear.
In a separate pot, bring water to a boil. Add a pinch of salt and the rinsed rice. Cook the rice until it’s 70% done.
[Preparation - Part 4: Adding Vegetables and Rice to Chicken]!
Now that our chicken is tender, let’s add the vegetables. Toss in the diced carrots, potatoes, and frozen peas.
Layer the partially cooked rice on top of the chicken and vegetables. This layering technique allows the rice to absorb the flavorful broth and spices as it finishes cooking.
Cover the pot tightly and let it simmer on low heat until the rice is fully cooked and has absorbed all the aromatic goodness from the chicken and spices.
