【French Pastry“Tropezienne“】Brioche Sandwich with Plenty of Cream
I made a pastry called Tropezienne from Southern France.
It’s a sandwich using Brioche which is bread made with butter tastes with custard cream and whipped cream.
■9 brioche 8cm
250gall propose flour 2 cups
40g sugar
4g salt 1/2tsp
8g fresh yeast 1 tbsp
*(or 4g dry yeast 1 tsp)
150g eggs *3 eggs
110g unsalted butter
1 egg yolk
10g water 2tsp
Pearl sugar
■Cream
2g gelatin 1tsp
10g water 2tsp
2 egg yolks
20g sugar 5tsp
15g flour
150g milk
10g butter 2tsp
Vanilla extract
200g whipping cream
50 g mascarpone
*(If you use 250g of whipping cream (38% or more), you don’t need the mascarpone.)
30 g powdered sugar
■Syrup
100g water
50g sugar
Orange flower water
