I use European style semolina (it is called ’mannaya krupa’ in Russian) that is usually sold in European stores. At least I didn’t find this type semolina in regular chain stores in Canada. Ingredients: - 1/2 cup all-purpose flour - 1/2 cup semolina (european style) - 4 eggs - 2 cups milk - 1/4 cup olive oil - 1/4 tsp. salt - Filling 1: - 200 gr. mushrooms -1/2 onion - 2-3 potatoes (boiled and mashed) - dill and salt to taste Filling 2: - 200 gr dry cottage cheese - 50 gr. cream cheese - 2 tbsp. honey or sugar (optional) - 1/2 raisins Instructions: 1. Beat eggs till foamy. 2. Add flour and mix again. 3. Add the salt, olive oil, semolina. Mix till combined. 4. Transfer the mix into a large bowl, add milk well. 4. Heat a non-stick pan over medium heat and pour a small amount of batter (about 1/4 cup) into the center of the pan, tilting the pan to spread the batter evenly. 5. Cook for 2-3 minutes or until the edges start to turn golden brown. Flip the crepe and cook for an 1-2 minutes. Grease it with butter. 6. Remove the crepe from the pan and set aside. Repeat until all the batter is used up. 7. Fill each crepe with your desired filling and fold over to enclose. 8. Serve warm and enjoy! My name is Svetlana, I live in Halifax, Canada.
