couldn’t have cooked up all these recipes without my favorite Our Place pieces Don’t forget they are having their biggest sale of the year!
We are all craving warming, cozy, and wholesome meals these days, I know I am! Here are some recipes I’ve been making recently to keep me full and nourished during the colder weather while also enjoying time with friends and going to work events 😇
RECIPES !!
Apple Pie Yogurt Toast
Mix 1 sliced apple, brown sugar, cinnamon, lemon juice, and flour. Cover with aluminum foil and bake at 375 for about 30 minutes. Mix yogurt with lemon zest and a little maple syrup, spread yogurt mixture on toast and top with baked apples.
Dense Bean Salad
Season a pack of boneless skinless chicken thighs with taco mix, salt, and lime juice (let marinate for 30min)
Chop: tomatoes, red onion, cilantro, avocado, jalapeño
Mix above veggies with one can of black beans and one can of chickpeas (both rinsed)
Grill chicken and let it rest for 10 minutes
Dressing: juice of 1 lime, 1/2 cup avocado oil, 1/4 cup red wine vinegar, 1/2 tsp dijon mustard, salt, 2 tsp taco seasoning
Dice chicken and mix with all other ingredients
Chickpea Eggs with Tzatziki
Add 1/2 can of drained and dried chickpeas in a pan and season with onion salt, smoked paprika, and garlic powder.
Once crispy make a whole in the middle of the chickpeas and break two eggs into the middle
Tzatziki: mix 1/2 cup of yogurt, salt, lemon juice, grated garlic, dill, cucumber
Plate and add pickled jalapeños or pickled onion
Romanian Stuffed Peppers
cut the top and core the 5-6 evenly sized bell peppers
Mix 1 lb of ground meat (I used chicken) with chopped white onions, dill, parsley, salt, smoked paprika, onion salt, berbere (ethiopian spice blend), 1/2 cup rice, 1 egg
Fill each pepper with meat mixture and place in pot
Mix 1 cup of water and 1 cup of canned tomatoes and season with salt and paprika
Pour tomato mixture over the peppers and add more water if needed to fill half way up the peppers
Cover and braise in the oven at 375 for 1.5 hours
Simple Vietnamese Soup
I added soba noodles to mine (cooked separately)
Also chili crisp
Caesar Salad
Dressing: 1 garlic clove, 2 tbsp dijon mustard, 2 anchovies, 2 tbsp lemon juice, 2 tbsp mayo, 3 oz parmesan, ground black peppers, olive oil
Grill chicken, rest, and slice
Mix crispy greens, chicken, croutons, and dressing
Sunday Pot Roast
Season a large piece of chuck with salt and pepper on all sides and sear well on both sides plus sides, then set to the side
Add sliced onion and celery to the same pot and cook 2-3 minutes
Add anchovies and tomato paste, cook down until paste is a bit brown
Pour in about 1/2 bottle of red wine and 500ml bone broth
Add quartered potatoes and carrots, seared chuck roast and herbs in the pot
Cover and braise at 350 for 3 hours
