▼Irish soufflé▼ <Ingredients> ・Bushmills Single Malt 12 Year: 50ml ・Vanilla Syrup: 10ml ・Homemade Distilled Coffee Acid (*1): 10ml ・Lime Juice: 10ml ・Orange Flower Water: 2 dashes ・Egg White: 30ml ・Heavy Cream: 20ml ・Yuzu Kombucha: 120ml (Decoration) ・Sakura Leaf Powder (powder made from salt-pickled cherry blossoms) ・Edible Flower (*1) Ice coffee is vacuum distilled using an evaporator to clarify the color while concentrating the aroma. Acidity agents such as citric acid and malic acid are added. <How to make> ①Pour Yuzu Kombucha into a glass. ②In a shaker, combine Bushmills Single Malt 12 Year, Vanilla Syrup, Homemade Distilled Coffee Acid, Lime Juice, Egg White, and Orange Flower Water. Blend with a hand blender, then pour in the heavy cream. ③Add ice to the shaker, shake well, and pour into the glass from step 1 (leaving a small amount in the shaker). Place the glass in the freezer for about 2 minutes. ④Add the remaining liquid from step 3, sprinkle Sakura Leaf Powder, and garnish with an Edible Flower. 【BAR TIMES interview article】
