Budae-jjigae : 부대찌개 (Korean Army Base Stew) | Ordinary Kitchen 오디너리 키친

Hello! Welcome back to my channel. Today I will be sharing how to make Budae-jjigae (부대찌개) or otherwise known as Korean Army Base Stew recipe. This dish is a classic Korean comfort food which uses American processed foods such as spam, sausages, and beans.. I never met another Korean who has not eaten this dish. The best part about this dish is that it’s super quick, easy, and customizable to make, maybe 20 minutes at most! Pot used in video: Beef bone stock: Sauce Ingredients: 3 minced garlic 2 tbs red pepper powder (gochugaru) 2 tbs soy sauce 1 tbs red pepper paste (gochujang) Ingredients: ½ onion 1 green onion 2 sausages tofu (firm or soft) spam ½ cup chopped kimchi ½ rice cakes 3 tbs baked beans 500 grams (2.1 cup) beef bone stock: Rice water or water works instead of stock! Recipe: 1. Mix sauce ingredients together and set aside. 2. Julienne onion, finely chop green onion, diagonally chop sausages, cut tofu, cut spam 3. Add prepped ingredients around the pot, then add kimchi, rice cakes, and baked beans in the center. 4. Place pot on stove, add sauce mixture on top and beef bone stock. 5. Simmer for 5 minutes then add in ramen noodles until cooked. Tips: If liquid has reduced too much, just add more water and cook until it gets a little thick. Use only 1 tbs red pepper powder if you can not handle heat. It will still be a bit spicy though :) I do not recommend using chicken stock or beef stock, I tried it and it still tastes good but maybe a bit too heavy. Rice water or water works better!
