Do try and let me know. 🙂 #veghandi #recipe #youtube #easyrecipe Ingredients Quantity For Garam Masala Black cardamom 2 no’s Cinnamon stick ½ no Green Cardamom 4 no’s Cloves 3 no’s Black pepper whole ½ tsp Kasuri methi 1 tsp. For Handi Masala Oil 3 tbsp Bay leaf 2 no’s Cumin seeds 1 tsp Onion chopped 2 no’s Ginger & Garlic paste 1 tbsp Tomato chopped 3 no’s Salt to taste Kashmiri red chilli powder 1 ½ tsp Turmeric powder ¼ tsp Coriander powder 1 tbsp Garam masala ½ tsp Cumin powder ½ tsp Water ¼ cup ¼ cup Ginger juliennes ½ inch Green chilli slits 2 no’s Yoghurt ¼ cup Onion 1 no (cut into cubes) Capsicum 1 no (cut into cubes) Carrot blanched 1 no (cut into cubes) Potato boiled 1 no (cut into cubes) French beans blanched 3-4 no’s (cut into diagonally) Cauliflower blanched 1 no (cut into florets) Coriander chopped 1 tbsp sprig for garnish Paneer 50 gm (cut into cubes) Green peas boiled ¼ cup Dry masala sprinkle. Method:- For Garam Masala. 1. Take a kadai add black cardamom, cinnamon stick, green cardamom, cloves and black pepper whole and roast the whole spices for 1-2 mins until the aroma comes out. 2. Then take a mixer jar, add the roasted whole spices and kasuri methi now grind it into powder and keep it aside for further use. For Handi Masala. 1. Heat up a kadai and add oil, bay leaf and cumin seeds cook till the cumin seeds are splutter. 2. Now add onion chopped mix well and saute for 3-4 min until it turns light brown in colour. 3. Then add ginger & garlic paste mix well and saute for 1 min. 4. Now add tomato chopped mix it well. 5. Then add salt to taste mix well and saute for 3-4 mins. 6. Now add Kashmiri red chilli, turmeric, coriander, garam masala and cumin powder mix well and saute it for a while now add water and mix well and cook the masala until oil releases in it. 7. Then add ginger juliennes, green slits and yoghurt mix well. 8. Now add onion and capsicum cubes mix well. 9. Further add carrot cubes, potato boiled, french beans and cauliflower florets blanched mix it. 10. Then add water mix well and cook for 1-2 mins. 11. Now add chopped coriander mix it and cook for 2-3 mins. 12. Lastly add paneer cubes and blanched green peas mix it well. 13. Remove in a serving handi/bowl and sprinkle some dry masala. 14. Garnish with coriander sprig. 15. Serve hot.
