Yogurt Fruit Clusters
Strawberry Almond
Ingredients:
½ cup Greek yogurt
1 scoop protein powder, vanilla flavor
6 drops of liquid Stevia
1 - 2 tsp. Honey
½ cup roasted sliced almonds
1 heaping cup organic fresh strawberries, chopped small
Lemon/Blueberry/Almond
Ingredients:
½ cup Greek yogurt
1 scoop protein powder, vanilla flavor
Zest from 1 organic lemon
1- 2 tsp. Freshly squeezed lemon juice
1 - 2 tsp. Honey
6 drops of liquid Stevia
½ cup roasted sliced almonds
1 cup fresh organic blueberries
Chocolate Dipping Sauce:
Ingredients:
1 package of Guittard Milk chocolate chips, or any kind you like
2 Tbsp. Coconut oil
Directions:
Place the yogurt and protein powder into a medium bowl and whisk to combine. Once smooth add the sweetener (stevia and honey) and stir.
Next, add the almonds and fruit including lemon juice and zest if using and fold all the ingredients together.
Because I like these treats in a more bite sized portion, I used a small scoop to portion them out onto a parchment paper covered baking sheet. Then poke a toothpick in the center of the cluster and push the ingredients together with your hand to make the toothpick stand up vertical.
Place the tray in the freezer for at least an hour. Then melt the chocolate chips in a double boiler with the coconut oil and stir until melted and smooth. Dunk each cluster, holding on to the toothpick, into the chocolate until it is fully coated and place it back onto the parchment paper covered pan. When all are coated in chocolate, place the tray back in the freezer until frozen.
To eat these clusters, simply remove some from the freezer and let them sit out for 1 to 4 minutes or until they are soft enough to bite. These are very delicious! Enjoy!
