I didnāt grow up eating a lot of eggs bc my dadās allergic, so when my mom did make anda masala (a more punjabi-style one than my fusion one here), it was a treat š
Coconut Jammy Anda Masala
// INGREDIENTS //
- 1/2 tbsp coconut oil
- 1/2 tsp cumin seeds
- 1/2 tsp fennel seeds
- 4 cloves
- 10 kadi patta (also called curry leaves or sweet neem leaves)
- 5 garlic cloves, minced
- 3/4 inch ginger, grated
- 3 birds eye green chilies, finely chopped ( /-)
- 1 small onion, finely chopped
- 3 tbsp tomato paste
- 1 large tomato, finely diced
- 1/2 tsp turmeric
- 2 tsp coriander powder
- 1 to 2 tsp kashmiri red chili ( /-)
- 1/2 tsp black pepper
- Salt to taste
- 2 cups full fat coconut milk
- 1/2 tsp garam masala
- Handful of kasuri methi (dried fenugreek leaves), crushed between palms
- 4 pasture raised eggs
// RECIPE //
1ļøā£ Heat up coconut oil, then add cumin, fennel, & cloves. Once they start wiggling around, quickly & carefully add kadi patta (there will be spluttering so donāt stand too close!) Toast around for 30 sec.
2ļøā£ Add garlic, ginger, chilies, and onion. SautĆ© until onions are a bit translucent.
3ļøā£ Add tomato paste & cook for 3-4min to caramelize - the color will go from bright red to deep dull red.
4ļøā£ Add tomatoes, turmeric, coriander, red chili powder, black pep, & salt. Cook until tomatoes are mushy.
5ļøā£ Add coconut milk, mix well, & raise the heat if needed to maintain a slight simmer. Simmer for 3-4min.
6ļøā£ Add garam masala, kasuri methi, & mix well for a minute. Taste for salt then turn off heat.
7ļøā£ Add the eight halves of your eggs. Garnish with a sprinkle of crushed kasuri methi.
Jammy Eggs:
1ļøā£ Bring a saucepan with enough water to cover the eggs to a vigorous boil.
2ļøā£ Using a slotted spoon, lower in your eggs.
3ļøā£ Immediately start a timer for 6min 30 sec (I personally prefer than exactly 6min eggs, but you can try both!). Maintain a boil.
4ļøā£ Remove the eggs and dunk them in the ice bath. Let them sit for 5min then peel & enjoy!
