Инжир очень древнее растение. Еще в 372 году до н.э Теофраст, “отец ботаники“ описывал сотни сортов инжира.
Инжир едят едят в сыром виде, используют как начинку для пирогов, готовят мармелад, варенье, чатни и вкусные соусы. Его лучше не есть людям, страдающим сахарным диабетом и подагрой.
Инжир богат витаминами, микроэлементами, белками и сложными углеводами. В нем особенно много калия (который необходим для работы сердца и сосудов) и желаеза (что способствует профилактике анемий).

Обычно добавляю 700 гр сахара на кг фруктов, но в этот раз положила 0,5 кг сахара на 1 кг фруктов потому что мой инжир переспелый.
Interesting facts about figs
Fig is one of the ancient fruits. In 372 bc, Theophrastus, the father of botany described hundreds of types of figs in his works.
Figs are consumed raw, used for pies, tartes, desserts, made out of them marmalades, chutneys and sauces. Figs are not recommended for people with diabetes and gout.
Figs are rich with vitamins, microelements, proteins and carbohydrates. It is especially high in potassium (which is necessary for the work of the heart and blood vessels) and iron (which helps to prevent anemia).
DO NOT REMOVE THE STEM! Such figs retain their beneficial properties; it is very useful in cardiovascular diseases; and ESPECIALLY USEFUL FOR MEN😜
Now, the preserve:
Normal fruit and sugar ratio: 1000:700 gr
Mine is 1000: 500 gr, because my figs are over ripe. If the figs are just about right - perk them with fork. Sugar ratio is 700 gr per 1 kg of fruit.
Water ratio: 250-300 ml water to 1 kg sugar
Making the preserve is done 3 times with 10-12 hours of cooling time. Can be done in one go too, but cooking it with intervals gives that shiny, honey like syrup and your fruits stay intact.
Let me give the process in steps 👇🏻
Add water to sugar (just enough to melt sugar). Bring it to boil on a high heat. Sugar water does not have to turn into syrup, it is enough for sugar fully melt.
1st boil: Add fruits and bring it to boil on a high heat. Once came to a boil, lower the heat into medium. Let it boil 30 min. If you are mixing the fruits with the spatula or spoon- be gentle, try not to hit or squeeze the fruits. Mixing the fruits with just shaking the pot will also do. Take the pot from the heat and let it cool 10-12 hours (I usually keep it away over night)
2nd boil: Again bring it to a boil on a high heat, then lower the heat to a medium and let it boil 30 min. Then take it off the heat and cool another 10-12 hours.
3rd boil: Bring it to the boil on a high heat, add a juice of half a lemon, turn the heat to the low and let it simmer 30 min. Lemon juice prevents syrup from crystallizing!
Your preserve is ready.
Sterilize your bottles before bottling the preserves.
