Quick Yuzu Salmon Noodle Salad

Save this Yuzu Salmon Noodle Salad for some healthy eating inspiration. Balance is everything this time of year so while I love to load up on veggies, there’s always room for desserts too! This one came together real quick cause I used whatever crunchy veggies I had on hand - you could always use celery, cucumbers, carrots, whatever you like, with some leftover protein. The yuzu dressing is what ties it all together and makes it interesting! I got my yuzu at the Asian market, but Trader Joe’s also has a hot sauce with yuzu that’s 💯🍋. You could put this on anything! . Yuzu dressing recipe: 1 tsp yuzu kosho 2 tbsps soy sauce 1/4 cup orange juice 2 tsps sesame oil 1 tbsp rice vinegar 2 tsps maple syrup Blend everything together and pour over noodle salad with cooked soba, chopped cabbage, snow peas, carrots, green onion, cilantro, and radish. Serve with favorite protein. Enjoy!
