Calf brains are a specific product. Probably, it will not be to everyone’s taste. To be honest, my wife has never even tried them. But I love this dish, so from time to time, when I manage to buy veal brains, I cook them. Here and now, I brought this refuse from the market, and I started cooking. My kids also eat roast veal brains and they love them. I can’t overcome prejudice. After all, this is how a person is arranged: we calmly eat meat, liver, tongue, and heart, but we fixate on something and remember that the meat product in front of us was once an animal. THERE CAN NEVER BE TOO MANY BRAINS. Like lard, which is bone marrow and, ultimately, everything from meat and fish, freshness is very important. Therefore, when choosing a veal brain, pay attention to the fact that it is beautiful, whole, pink, and without blood or dark spots. Before cooking, soak the brain in cold water for an hour, later - remove the films and rinse well. Next, the brain can be fried in breadcrumbs or flour.
