HOMESTEAD PANTRY STOCK | Pressure Canning Potatoes

Let’s Pressure Can Potatoes! This is my first time canning potatoes so we will be going through this process together. I am using quart sized jars, I pre-washed the jars and lids, then washed, blanched, and chopped the potatoes into 1-2 inch pieces. Next I par boiled them for 2-3 minutes to release the starches. Next drain the potato water and rinse potatoes. Filled my mason jars to 1 inch of head-space, topped with hot water, cleaned rims of jars with damp cloth and put lids on finger tight. Into my All American Canner I double stacked my jars and pressure canned at 10lbs of pressure for 40 mins. So happy that my homestead pantry is expanding with this new staple food item. PS. Don’t feel like you have to grow your own potatoes to do this for your own food security, you can simply pick up a bag of potatoes from a local farmers market or grocer and you too CAN can your own potatoes! ____________________________ That 1870’s Homestead P.O.
