Kulich/Paska. Russian Easter Bread.

Kulich, in some parts of Russia and Ukraine also called Paska is a traditional Easter bread and with its buttery, wet texture reminds of Italian Panettone. Kulich Recipe: 500g flour 150ml milk 3 eggs 1 tbsp active dry yeast 150g sugar 100g butter 50g sour cream 1 cup raisins lemon zest or dry lemon peel Make starter by warming up milk ( not hotter then 100°F) To warm milk add 2 tbsp of sugar. dry yeast and 2 -tbsp of flour. Leave it to rise for 10-15 minutes. Then, add remaining amount of sugar, eggs, sour cream. Mix well. Add flavoring and melted butter, mix and set aside. In a bowl of a stand up mixer, sift flour . Add wet ingredients and start kneading with hook attachment on medium speed, until dough is smooth and glossy and does not stick to your hands. Add raisins. Mix on low just to combine. Cover the dough and set to proof for 45 -60 minuted, or until doubles in size. Take out form into a ball and transfer into a paper form. Cover and let proof for 20 minutes. Bake at 350°F(175°C) for 45-60 minutes. Take out and let cool before glazing. Sugar Glaze: 1 cup sugar 6 tbsp water 6g Gelatine ½ tsp lemon juice Soak Gelatin with 2 tbsp of water for about 5 minutes. In a small sauce pan. add sugar and the rest of water, add lemon juice. Bring to a boil. Add Gelatine and start mixing with electric mixer until white. Add Vanilla. Mix until soft peaks and immediately apply onto Kulich. This glaze sets very fast.
