Summerhill Pyramid Winery Develops New Process to Reduce Use of Sulphites in winemaking

Sulphites have been used for 5,000 years to prevent re-fermentation in wine ... but it comes with a cost, partially obscuring the pure fruit flavour of the wine. Now, Summerhill Pyramid Winery has released a vintage made with a new process that reduces the need for sulphites by replacing oxygen in the wine tanks with nitrogen. In the case of their 2013 Ehrenfelser, sulphites were reduced by 90 per cent, and the resulting wine has a much fresher taste.
