Fresh ginger, peeled, microplaned 4 - 5 cloves garlic, minced ¾ tsp. Smoked paprika ⅓ cup chicken broth Garnish: Sliced green onion Directions: First we will make the marinade. To a medium bowl add the pineapple juice, soy sauce, tomato paste, coconut sugar, apple cider vinegar, ginger, garlic, chicken broth and the smoked paprika. Whisk to combine. Pour the marinade over the chicken in a bowl reserving 1 cup of the sauce for basting. Make sure the chicken is submerged in the marinade. Cover and refrigerate overnight. You can marinate for a shorter time but you would need to marinate at least 6 hours so the sauce can penetrate the chicken. Cover and refrigerate the reserved marinade also. The next day, preheat the oven to 400 degrees F. and place the reserved marinade in a small saucepan over medium heat. Once hot, lower the temperature to low and simmer for 10 minutes or the sauce has reduced some. Place the chicken thighs on a foil covered baking sheet and place it in the oven for 15 minutes. Then turn the pieces of chicken over and brush the chicken with more marinade from the reserved marinade and cook for an additional 15 minutes or until the internal temperature is 165 degrees F. Turn the oven to broil and place the pineapple rings on top of the chicken thighs and brush more reserved chicken marinade over all. Broil the chicken for 3 - 5 minutes about 8 inches below the broil element. Keep a close eye on the chicken so it doesn’t burn. You will see the marinade caramelize as it cooks. Yum.
