Sauce, seeds can be removed for a milder sauce. 3 Tbsp mild green chiles in a can 2 Tbsp olive oil ½ cup chicken broth 1 tsp oregano leaves ½ tsp ground cumin ½ to 1 tsp. Salt Corn tortillas Garnish: Sour cream Chopped cilantro Cotija, feta, or goat cheese crumbles Now, let’s get cooking: Begin by heating up your Instant Pot to the sauté mode for 7 minutes. Add olive oil and sear those chicken thighs, giving them a sizzling start. No need to move them around; just let them work their magic. Flip them over and let the other side join the party for another 3-4 minutes. Once done, transfer the seared chicken to a bowl to keep it warm. Next, it’s time to sauté the onion. In the same Instant Pot (don’t worry about cleaning it), let the onion dance in the remaining oil for about 5 minutes, stirring frequently. Add the minced garlic for the final minute, making sure it doesn’t burn. Turn off the Instant Pot. Now, the flavor magic begins. In a blender, combine fire-roasted tomatoes, sautéed onion and garlic, chipotle peppers, green chiles, chicken broth, oregano, cumin, and salt. Blend until you have a silky-smooth sauce, which is the heart and soul of our Chicken Tinga. Pour this glorious sauce back into the Instant Pot and add the seared chicken. Give it a good stir, making sure the chicken thighs are comfortably submerged in all that deliciousness. Set your Instant Pot to pressure cook for 6 minutes. Afterward, let the pressure release slowly for 10 minutes. Then, it’s time to shred that tender, flavorful chicken with a couple of forks. Pop the shredded chicken back into the Instant Pot and set it to sauté for 5 minutes to heat everything up. Now, for the grand finale! Warm up those corn tortillas (a tortilla warmer works wonders) for about 45 seconds. Lay them out and generously fill each with the savory Chicken Tinga. Top it off with some fresh cilantro, a dollop of sour cream, and a sprinkle of Cotija cheese. Get ready to rock and roll with these incredible Chicken Tinga Tacos!
