Palak Chole is a North Indian style delicious curry made with spinach (palak) and white chickpeas (chana). It is yet another variety of curried chickpea dish that is liked by many people. You can serve this delicious curry with steamed basmati rice or Indian flatbreads like roti, paratha, naan for a hearty and comforting meal.

Ingredients Quantity
Oil 3 tbsp
Bay leaf 2 no
Black cardamom 2 no’s
Cumin seeds 1 tsp
Ginger chopped 1 tbsp
Green chilli slits 3 no’s
Onion chopped 2 no’s
Tomatoes chopped 2 no’s
Salt as required
Coriander powder 1 ½ tbsp
Red chilli powder 1 tsp
Turmeric powder ½ tsp
Black salt ½ tsp
Garam masala 1 tsp ¼ tsp
Aamchur powder 1 tsp
Water ½ cup
Boiled chickpeas 250 gm
Spinach puree 1 bunch
Kasuri methi ¼ tsp
Ginger juliennes 3-4 no’s
Lemon juice ¼ tsp
Coriander sprig for garnish.
For tempering.
Ghee 2 tbsp
Garlic chopped 1 tbsp
Red chilli powder a pinch
Method:-
1. Take a kadai add oil, bay leaf, black cardamom and cumin seeds mix well until its turns brown in colour.
2. Now add ginger chopped, green chilli slits and onion chopped mix it well and saute on medium flame till light brown in colour.
3. Then add tomatoes chopped and salt mix well and saute for 4-5 mins on medium flame.
4. Now add coriander, red chilli, turmeric, black salt, garam masala and aamchur powder mix well and saute on medium flame for 30 sec.
5. Further add water mix it combine well and roast for 1 min.
6. Then add spinach puree mix and stir it well.
7. Further add kasuri methi, ginger juliennes, garam masala powder & lemon juice mix well and cook for 1 mins.
8. Remove in a serving bowl and add tempered garlic.
9. Garnish with coriander sprig.
10. Serve immediately.
For Tempering:-
1. Heat up a sauce pan add ghee, garlic chopped mix well and saute until its golden brown in colour.
2. Lastly add a pinch of red chilli powder.
3. Remove in a bowl and keep aside for further use.
