#MexicanRedRice also known as arroz a la mexicana, arroz mexicano, is a Mexican side dish made from white rice, tomato, garlic, onion, and perhaps other Mexican red rice is easy to make and authentic in taste. #easyrecipe #recipe #youtube #chefharpalsingh Ingredient Quantity Olive Oil 2-3 Tbsp Garlic chopped 1 Tbsp Green chilli chopped 2-3 No. Onion chopped 1 No. Green capsicum chopped ¼ cup Yellow bell pepper chopped ¼ cup Red bell pepper chopped ¼ cup Corn kernel ¼ cup Rajma boiled 1½ cup Tomato puree 4 no. Tomato ketchup ½ cup Salt to taste Red chilli flakes 1 Tbsp for garnish Cumin powder 1½ Tsp Mix herbs 1½ Tsp for garnish Paprika powder 1½ Tsp Coriander chopped 2 Tbsp Leftover Boiled Rice 1 Bowl Method: 1. Heat olive oil in kadai, add chopped garlic and green chillies, mix well and sauté for 1 min. 2. Add chopped onion, mix well and sauté for 2 min. 3. Add chopped green capsicum, yellow bell pepper, red bell pepper and corn kernel, mix well and sauté for 2 min. 4. Add boiled rajma, tomato puree and tomato ketchup, mix well and cook for 1 min. 5. Add salt, red chilli flakes, cumin powder and mix herbs, mix well and sauté for 6 min 6. Add Paprika powder and coriander chopped, mix well and cook for 1 min. 7. Spread the leftover rice over the masala and cook for 2 min. 8. After 2 min mix the rice well. 9. Remove in serving bowl, garnish with mix herbs and chilli flakes on top and serve hot.
