Viking Cooking: Pan Fried Squid It’s nearly a full moon, and the freezing cold bites to the bone. This is the perfect time to hunt for squid. We begin today’s cooking by cleaning the squids. First we clean the insides and remove their skin. Then we cut them into pieces and gently cut into the epidermis, so they don’t pop and crack during the frying process. When the cleaning process is done, we put a pan, with some lard on the fire. As we wait for the pan to get nice and hot, we slice some garlic. We put the squids into a very hot pan, mix them around a bit, add the garlic and mix it well. After a few moments the squids start changing their color to a nice pinky shade. That’s when we know our protein rich and nutritious meal is done. Enjoy - Njóta!
