Blend until well combined and creamy. Transfer ‘protein egg mixture’ into a bowl. Dip each slice of bread in the protein egg mixture, ensuring each slice is soaked. Two slices of bread should absorb all of the protein egg mixture. Lightly spray a non-stick cooking pan with non-aerosol cooking spray and heat over medium-low heat. Add soaked bread slices and cook for 2-3 minutes, flip, and cook for another 2 minutes or until the French toast is lightly browned and cooked through. Serve with your favorite pancake toppings! I love a dollop of Greek yogurt, fresh berries, and a drizzle of maple syrup. Enjoy! NOTES: If you prefer a sweeter French toast, you can add some granulated or liquid sweetener to the protein egg mixture (maple syrup, monk fruit, and/or stevia would all be great options). Sub in vanilla Greek yogurt for even more flavor!
