6 Insanely Delicious Chicken Recipes, You Have to Cook!

(1) Chicken Saltimbocca (All these 6 recipe links below) It means “Jumps in the mouth“ or “Jump mouth“ in Italian An Italian dish normally made with veal but works equally as well with chicken thighs.  This version is braised with Marsala wine and white wine.  The sauce is thickened with a little butter and the flavors are truly to die for,  a marriage made in  heaven.  Enjoy it with a nice white wine such as a Riesling to match the sweetness of the sauce, or if you prefer reds, than a light red such as a Gamay or Pinot Noir, even a Rose will go very well.  Enjoy my Juicy Chicken Saltimbocca! (2) Chicken in roasted bell pepper sauce with spinach and mushrooms Chicken in roasted bell pepper sauce. If you like bell peppers or capsicums, then this is for you. There is something magical that happens to bell peppers or capsicums once roasted. They become a whole new vegetable with a pleasing texture and smoky flavour. This recipe uses the peppers for the sauce base, giving you a reddish velvety sauce. It is made by first sautéing chicken thighs that have been coated in cayenne pepper and smoke paprika. I used triple smoked ham for that beautiful intense smoky flavour that permeates throughout the chicken, but any good smoked ham will work well.  Enjoy this chicken mozzarella dish with a great white wine such as a Chardonnay or if you prefer reds, a light Pinot noir.  (4) Garlic and Herb Chicken Chicken thighs with Crispy Skin served on Mash A very simple and quick to make, garlic and herb chicken recipe cooked in a pan. The chicken is juicy and the crispy skin will taste like a roast chicken. Best to use thighs but you could also use the chicken breast. Make sure the skin is on and any bones removed. If using dried herbs, use thirty percent less than if using fresh. Try and use fresh parsley, as dried parsley has little flavour. I like to serve mine on potato mash (see my recipe) but that’s optional, you could also serve it on sweet potato mash or any vegetable you like. (6) Lemon Butter Chicken Thighs Succulent crispy skin chicken with lemon butter cream sauce It’s the sauce that makes this dish, the chicken is baked in the oven in it’s own juices smothered by the creamy lemon butter sauce. The smoky paprika permeates into the sauce and through the chicken meat.
