Tea leaves contain substances called enzymes. Enzymes are biomacromolecules with biocatalytic function, which can speed up or slow down the speed of biochemical reaction without changing the direction and product of the reaction. Most enzymes consist of proteins (a few are RNA), whose activity is easily affected by temperature, chemical environment and other factors. Under the action of high temperature, the protein molecular structure of enzymes will be irreversibly damaged, thus completely losing enzyme activity. In the process of detoxification, high temperature measures are adopted to transform the fresh leaf contents rapidly. The “deactivating“ of tea leaves makes use of the high temperature deactivating nature of enzymes to stop the activities of oxidase (especially polyphenol oxidase and peroxidase, etc.) in fresh leaves in time.
