Pulque - The sacred Mexican drink of the Aztecs 🌵🇲🇽🥴

The most Mexican drink is not Tequila or Mezcal but an ancient drink made from cactus, called pulque. This is a traditional drink you will only find in Mexico and it’s been drunk for centuries. We visited the pueblo mágico of Tepotzotlán in the State of Mexico to find out more about this ancient and traditional drink, which is almost totally unknown outside of Mexico. This is because pulque is made from the maguey, a huge Mexican cactus plant, similar to the agaves which are used to make tequila and mezcal. Unlike tequila and mezcal, pulque is not distilled. It’s a wine-like drink which never stops fermenting, meaning that if you don’t drink it soon after it’s made, it tastes awful. Because of this, it’s very difficult to export pulque outside of Mexico. We visited the maguey fields and saw the ancient process of extracting the aguamiel from the magueys and then fermenting it into the alcoholic drink, pulque. This process has barely changed in centuries since this drink was popular in prehispanic times. Nowadays, beer, wine, tequila, and mezcal are much more common than pulque in the bars of Mexico. If you look hard though, you can still find pulque being sold in many places - just make sure it’s fresh! If you visit Mexico, you should definitely try pulque, the alcoholic drink of the Aztecs that can’t be found anywhere else in the world!
