Quick and Easy Carrot Cake

Carrot Cake with yummy cream cheese icing - recipe tried and tested hundreds of times. The surprise at the end of the video is the work of my son! Ingredients: 1 cup oil (vegetable cooking oil) 2 cup sugar 3 eggs 2 cup flour 2cup grated carrots 2tsp cinnamon 2 tsp baking soda 2 tsp vanilla 1 tsp salt ¾ cup pineapple (drained, optional – I omitted this in my video) Cream Cheese Icing: 100g cream cheese 50g butter 1 - 2 cups icing sugar (up to individual’s taste; my sweetness taste is 1 cup)
