Join Melissa Miranda as she makes Lumpiang Sariwa, Filipino spring rolls packed full of fresh vegetables and tofu. While this dish isn’t always vegetarian, this medley of veggies bring a beautiful color and snap to the spring rolls. And instead of using store-bought wrappers, Melissa makes her own that consist of just five ingredients, but are packed with flavor. INGREDIENTS: Wrapper: ½ cup all-purpose flour ¾ cup cornstarch 1 tsp. kosher salt 1 ½ cups water 5 large eggs Non-stick cooking spray Filling: 2 large carrots, peeled and cubed 1 cup peeled and cubed sweet potatoes ½ head purple cabbage, shredded 1 cup green beans, cut on a diagonal ½ medium onion, chopped ¼ cup finely chopped garlic, divided ½ block extra-firm tofu (about 7 oz.), drained and cubed 1 Tbsp. vegetable oil Nutritional yeast to taste 1 Tbsp. liquid amino acids Sauce: ½ cup light brown sugar 1 cup coconut milk 1 Tbsp. amino acids 2 Tbsp. cornstarch Assembly: 1 small head red or green lettuce Garlic
