This is what I cooked this week, and it was good

ROASTED TOMATO SOUP INGREDIENTS 1 1/2 to 2 lbs fresh tomatoes 1 shallot 2 cloves garlic Roast for 20 minutes at 400 °F Add into blender cup with 1/4 tsp dried Thyme 1/4 tsp dried basil 1/8 tsp smoked paprika salt and pepper to taste 1/4 to 1/2 cup chicken broth (optional) ENCHILADAS INGREDIENTS lb lean ground meat of choice 1/2 small onion 1 tsp garlic powder 2 tsp chili powder 1/2 tsp onion powder 1/2 tsp ground cumin 1 tsp salt pepper to taste 15 corn tortillas 1/3 cup oil (for softening corn tortillas) 12 oz Colby Jack cheese ENCHILADA RED SAUCE INGREDIENTS 3 to 4 Tbsp oil 1/4 cup all-purpose flour 2 Tbsp light chili powder 1 Tbsp beef or chicken bouillon 1/2 tsp ground cumin 1/2 tsp garlic powder 1/2 tsp onion powder 2 cups water *Bake at 400°F for 20 minutes* SLOW COOKER BBQ RIBS INGREDIENTS 3.5 lbs Style Ribs 1 cup Bbq sauce of choice 6 to 8 qt Slow Cooker *RUB* (makes enough for several uses) 3/4 dark brown sugar 1/4 cup dehydrated minced onion 1/4 cup beef or chicken bouillon powder 3 Tbsp chili powder 3 Tbsp smoked paprika 1 Tbsp smoked flaky sea salt (optional) 3 Tbsp salt-free lemon pepper 3 Tbsp granulated garlic powder
