This Indonesian chicken soup is the perfect thing to warm you up on a cold day. It’s packed full of fragrant spices, and it’s so hearty and comforting that you’ll want to dive right in!
Ingredients:
For the spice paste
6 garlic cloves
7 Thai shallots
20g ginger
10g turmeric
2 lemongrass stalks
20g galangal
5 candlenuts
For the soup
1 whole chicken, jointed into pieces
3tbsp coconut oil
1 cinnamon stick
2 star anise
2 green cardamom pods
2 cloves
1tbsp ground coriander
4 lime leaves
3 salaam leaves (optional)
Salt, sugar and white pepper, to taste
To serve
Rice vermicelli, cooked
Egg noodles, cooked
30g mung bean noodles (optional)
Small wedge white cabbage (about 200g), thinly sliced
Bean sprouts, washed and picked
1 tomato, cut into wedges
Boiled egg, halved
1 spring onion, sliced
Small bunch fresh coriander, chopped
Sambal (optional)
1 lime, cut into wedges
Deep-fried sliced shallots (optional)
