Raw Salmon Fish Sashimi Grade - 280g
Remove skin, place salmon skin on parchment paper then season with salt.
Place a cooling rack on top to prevent it from curling.
Grill for 15min over 180°C
Salmon fish - check for pin bones then cut into small cubes
Marinate salmon with soy sauce - 2 tablespoons, lime juice - 2 tablespoons
Mix Sriracha sauce - 3 tablespoons with Japanese Mayo - 3 tablespoons.
Combine sauce with Salmon then keep fish in fridge.
Cook sushi rice.
Chop spring onion - 1 sprig
Cherry Tomatoes - 8 pcs
Butter lettuce - few slices
Japanese cucumber - cut into small cubes
When rice is cooked, season with Furikake
Scoop rice into a bowl
Add butter lettuce, cherry tomatoes, cucumber cubes, kimchi, wakame salad & ebiko
Drizzle Teriyaki Sauce (2 teaspoons)
Top with marinated salmon, spring onions, furikake, wasabi & crispy salmon skin
