A ELEGANT AND EASY TO MAKE CHRISTMAS ROAST⎜VEGAN PITHIVIER

INGREDIENTS:
1 whole celeriac
Olive oil
500 g of mixed mushrooms, roughly chopped
75 g of vegan butter
2 leeks, thinly sliced
800 ml of unsweetened plant-based milk
Salt to taste
Black pepper to taste
Herbes de Provence to taste
Nutmeg to taste
2 tablespoons of nutritional yeast
1 tablespoon of vegan mayo
1 tablespoon of ketchup
1 teaspoon of melted vegan butter
5 tablespoons of plant-based milk
1 sheet of puff pastry
1 sheet of pastry dough - not the sweet kind
METHOD:
Preheat your oven to 410ºF/200ºC.
Wash and pat dry the celeriac, do not peel it; rub it with olive oil, salt, and pepper, wrap the celeriac in aluminum foil and bake it for 1:40 minutes.
