Last days of summer living slowly while waiting for autumn | Don’t rush time | Late Summer Days

Slow living during last days of late summer - picking blackberries, enjoying the last of August sunshine and exploring English countryside. _____ Blackberry clafoutis (dairy free, as my husband can’t have dairy, but I’ll link the original recipe I adapted from as well) Preheat the oven to 170C/ 338F 300g of blackberries 400g soy yoghurt (or cream if you want to make the original version) 20ml milk (I used dairy free, but feel free to use dairy) 100g sugar 125g plain white flour 80g almond flour 2 eggs 1 egg yolk Vanilla Pinch of salt 1 extra tbsp of flour 1 extra tbsp of sugar Mix blackberries with 1 tbsp of flour and 1 tbsp of sugar & set aside. Whisk eggs and sugar until light and creamy. Add soy yoghurt, vanilla, pinch of salt and milk, mix well. Gently mix in flour and almond meal. The batter will be quite liquid in consistency - that’s how it’s supposed to be. The cake is supposed to turn out creamy on the inside. Grease the cake tin with oil or butter (best to use the solid one, without the removable bottom - cast iron or ceramic would be ideal) Place your blackberries at the bottom & pour the batter on top. Place in the oven for 35-50 mins at 170C/ 338F Let it cool down for 15 mins & enjoy either warm or cold.
