4/4/20 Some of today’s SOURdough scoring

Scoring Country SOURdough with Oat and Pumpernickel SOURdough. Scoring has long history. It has evolved from simply marking which loaf is ours when baked in a communal town oven into now, where it is celebrated as an art form. No need to be scared, but it is trial and error until we know what scoring does to the bloom of our loaf. One of my favorite part in SOURdough making. Love, Emily
