Apple cookie

Apple cookies: •2 cups flour •150 g butter •1 egg yolk •2 tablespoons of starch •2 tablespoons hazelnut flour •1 teaspoon baking powder •1 packet of vanilla •3 tablespoons of milk •1/2 cup powdered sugar For the apple mixture: •Half kg of sour apples •250 g of granulated sugar • half lemon juice Put flour, starch, hazelnut flour, powdered sugar and baking powder in a bowl and mix well. Then add the butter, egg yolk and milk and knead quickly. Then wrap it in stretch film and let it rest in the refrigerator for at least 1 hour so that our dough will take a better shape. While the dough is resting, start preparing the apple mixture. For the filling: Wash the apples, peel them and remove the seeds. Cut the apples into small pieces in the food processor until they become fine, be careful not to mash them into a puree. Place the apples in a pot, add sugar and half lemon juice and cook for 5-10 minutes until the juice is absorbed. After it has absorbed its water, remove it from the stove and let it cool. (It will be better if you make your filling a day in advance.) Take the rested dough out of the refrigerator and divide it into 18 pieces. You can find the shaping stage in the video. If you want, you can also shape it with a honey spoon. Place the cookies you have prepared on a baking tray lined with baking paper and bake them in a preheated oven at 160 degrees until they are golden brown.
