Buffalo Chicken Wings

These aren’t your traditional buffalo wings, but they’re damn good. Better, if I’m being honest. Ingredients 2 cups buttermilk 2 cups pickle juice 6 chicken drums 2/3 cup hot sauce 1 stick butter 1.5 tbsp white vinegar 1/4 tsp Worcestershire sauce pinch cayenne pepper pinch garlic powder pinch salt 2 cups potato starch garlic powder chili powder onion powder black truffle salt pepper 1. Marinate chicken 30 minutes in buttermilk and pickle juice. 2. In pan over medium heat add hot sauce, butter, vinegar, Worcestershire sauce, cayenne, garlic powder, and salt. Set aside. 3. For dredge, combine potato starch, garlic powder, chili powder, onion powder, truffle salt, and pepper. 4. Dredge wings and shake off excess starch. 5. Fry 8 minutes at 325, then a few minutes more at 375 until golden brown. 6. Coat wings in sauce and dip in whatever you’d like. They are insane.
