3-Ingredient Tomato Soup + The Perfect Grilled Cheese

The easiest-ever 3-ingredient homemade tomato soup how to make the perfect grilled cheese! This is one of my FAVORITE lightened-up weeknight dinners that’s both nourishing & comforting, and quick enough to make in 30 minutes. First I’m sharing how to make tomato soup with canned tomatoes—which is way simpler (and often tastier!) than using fresh tomatoes. Just simmer those crushed tomatoes with sautéed onion and broth, then blend! And I like to serve that easy, creamy tomato soup with my ULTIMATE 3-cheese grilled cheese sandwich: with cheddar, Gruyère, and Swiss cheese on brioche bread! Of course, you can use more or less of whatever cheeses you want to make YOUR ultimate grilled cheese.
