Quiet days before Christmas | Slow Living in Winter | Gingerbread Recipe & Cottagecore Christmas

Support my channel: Slow living during festive days before Christmas. I like to spend this time quietly reflecting, making plans for the future and dreaming. One morning I woke up to meet the foggy sunrise, which was such a treat. These beautiful winter days are my favourite, and even though winter can feel overwhelming and sad at times, days and mornings like these make my life so much better. ______ Gingerbread recipe 300g flour (optional: 150g plain, 150g almond) 100g soft butter 100g brown sugar 1 tbsp honey 2 tbsp treacle/ molasses 1 egg 1 tsp baking soda Zest of 1 orange Main spices: 2 tsp ginger 1 tsp cinnamon 1/4 tsp cloves 1/4 tsp nutmeg Optional spices: 1 tsp freshly ground black pepper 1/4 tsp allspice 1/4 tsp freshly ground coriander seeds Method: Mix together flour, baking soda and ground spices in a big bowl. In a separate bowl mix softened butter (microwave for 10-20 sec to soften, but don’t melt fully) with brown sugar until creamy. Add 1 egg, honey, treacle, mix well. The mixture will become quite well emulsified. Mix wet and dry ingredients, lastly add orange zest and mix again. The dough will be soft, easily shaped, but not sticky. Refrigerate for minimum 30 minutes, best to refrigerate for 1-2 h or overnight. Separate the dough into 4 equal pieces - that way it will be easier to roll out. Keep the pieces that are not in use in the fridge. Roll out the dough to about 4mm thick. Cut out your gingerbread shapes and place well apart on a lined baking sheet. Bake for 8-10 minutes at 180C/ 355F. 8 minutes is good for a softer cookie, 10 minutes for a crispier cookie.
