30 Days of Cooking Pork Leg in 13 Minutes (Prosciutto)

Hello! Today we will show in just 13 minutes how we cooked a beautiful and tasty pork leg in 30 days. In Ukraine, this delicacy is called “Shovdar“. Shovdar is a traditional Carpathian dish: smoked or dried pork thigh. A certain analogue can be considered Italian prosciutto, Croatian prosciutto (pršut) or Spanish jamon, which differ in cooking features. Today we cooked a pork leg using hot smoking. Cooking process: Rub the surface of the ham with a small amount of nitrite salt, and then cover the meat with a large amount of salt. Leave in a cool place for 21 days. First, soak the foot in water for 2 days, and then dry it for 3 days in a cool place. We smoke 5 hours at t 140 °F. To make the shovdar delicious, they use firewood from fruit trees.
